Whole baked trout with herb and garlic salsa

1. Preheat the oven to 200 °C (390°F).

2. Combine everything but the fish in a food processor or a blender and process into a salsa like consistency.

3.Cover fish with the herb marinade on both sides and a little inside the fish cavity. Add a few lemon slices on top of the fish. Marinade for at least 4 hours. Place in a deep roasting tray and bake in the oven for 20minutes.

4. Serve with crushed new potatoes and, green buttered vegetables, grilled cherry tomatoes and lemon.
